Easy Beef and Broccoli Stir Fry

This was SO good!!!  I tripled the recipe and we had very little leftover.  I used round steak.
The recipe is from food.com.  Everyone in the family loved it--even Willow(almost 2 years old now).

Ingredients:
3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice
Directions:
1 In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
2 Add beef and toss.
3 In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
4 Stir-fry broccoli and onion in remaining oil for 4-5 minutes.
5 Return beef to pan.
6 Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan.
7 Cook and stir for 2 minutes.
8 Serve over rice.

Liver and Onions

Let me say first off that I know a majority of people think liver and onions are not edible. I was raised eating a lot of strange things and I'm thankful that I was!  While I won't eat some of the things I did as a kid(froglegs for example) some are still favorites....liver, brie, smoked oysters, oysters on the halfshell to name a few.

We still have a freezer full of organic local beef and in there was liver.  I was so excited when I brought the meat home and saw it!

Then I went searching for recipes and went with one with high ratings on allrecipes.com  Totally awesome!  I highly recommend it.  I did make a gravy to go with it just with pan drippings and milk which is not in the picture:o)


  • 2 pounds sliced beef liver
  • 1 1/2 cups milk, or as needed
  • 1/4 cup butter, divided
  • 2 large Vidalia onions, sliced into rings
  • 2 cups all-purpose flour, or as needed
  • salt and pepper to taste

Directions

  1. Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  3. When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

Pork Steamed Dumplings

It's been a long time since we've had a new family favorite/top rated recipe but this one is getting that title.  They are absolutely fabulous!  I used regular soy sauce and 1/2 Tbsp ground ginger since I had these on hand.  I needed two packages of wonton wrappers eventhough I stuffed them quite full.  They did stick together after steaming but not too bad:)

Pork Steamed Dumplings2 lbs. ground pork
1/3 c. cornstarch
2 tbsp. minced fresh ginger
1 tsp. minced garlic
3 tbsp. reduced-sodium soy sauce
3 tbsp. sugar
2 tsp. sesame oil
1/2 c. chopped green onions
60-90 won ton wrappers (depending on how full you stuff them)

-Mix all ingredients together in a bowl.

-Place about 1 tsp of the pork mixture in the center of each won ton wrapper and gather up the corners, pinching them together at the top. Pat the edges with water to make them stick.

To prepare and eat now:
Bring a pot of water to a boil and arrange dumplings in steamer basket over the boiling water. Cover and steam about 20 to 25 minutes or until the pork mixture is entirely cooked.

To freeze:Freeze for one hour on a cookie pan and then place in a Ziploc bag.

To prepare after freezing:Bring a pot of water to boil and arrange dumplings directly from the freezer in the steam basket over the boiling water. Cover and steam about 25 to 28 minutes or until the pork mixture is entirely cooked.

Cheesecake

I got this recipe for "Chantal's New York Cheesecake" from allrecipes.  The only change I made was that I had graham cracker crumbs and I added in a little sugar to the graham crust.  This was AWESOME!!!  Mine cracked like crazy and I followed the directions to a T so not sure why that was but it tasted so good nobody cared!



Ingredients

  • 15 graham crackers, crushed
  • 2 tablespoons butter, melted
  •  
  • 4 (8 ounce) packages cream cheese
  • 1 1/2 cups white sugar
  • 3/4 cup milk
  • 4 eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 1/4 cup all-purpose flour

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
  3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
  4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Rachel Ray's Sloppy Joes

These were so good and easy!  I used a cheaper ground beef and cut out the olive oil plus used green bell peppers.  We'll definitely have these again!


Ingredients

  • 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  • 1 1/4 pounds ground beef sirloin
  • 1/4 cup brown sugar
  • 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
  • 1 medium onion, chopped
  • 1 small red bell pepper, chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 cups tomato sauce
  • 2 tablespoons tomato paste
  • 4 crusty rolls, split, toasted, and lightly buttered

Directions

Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!

Gingerbread Waffles


These were in the Family Fun magazine and I knew I had to make them.  The smell of gingerbread in the house was so warm and comforting!  We ate them without syrup(and with syrup and with only butter and...) and they were delicious!  
Ingredients
4 eggs
1/3 cup sugar
1 cup molasses
1 cup buttermilk
3 cups flour
2 teaspoons ground ginger
1 1/4 teaspoons cinnamon
1 teaspoon ground cloves
3/4 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
1/2 cup unsalted butter, melted
Whipped cream and fruit, optional
Instructions
With an electric mixer, beat the eggs until they're light and fluffy, about 2 minutes. Add the sugar, molasses, and buttermilk and mix until blended, about 1 minute more.
In a separate bowl, sift together the flour, spices, salt, baking soda, and baking powder. Add the dry ingredients to the egg mixture and stir until smooth. Stir in the butter.
Cover and refrigerate the batter overnight or cook immediately in a waffle iron until golden brown, 2 to 4 minutes. Serve with whipped cream and fruit, if you like. Makes 14.

Duggar's oatmeal cookies


This is my official go-to recipe for oatmeal cookies.  These were AWESOME!   These were from Mandi's week on recipechallenge.


DADDY’S FAVORITE OATMEAL COOKIES 
(& Jessa’s favorite cookie dough!)
1 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs
Cream first four ingredients Together,
Now add:
1 t. baking soda
1 t. baking powder
1/2 t. salt
2 c. flour
3 c. oatmeal (or just a little less)
1 1/2 c. chocolate chips (optional)
Mix. Shape into balls on pan, then flatten with hand.
Bake at 350 for 10-15 min.

Mom's chili

Made this for the 1st time this week and it was a huge hit.  Will be a staple meal...served it over rice but crackers were really good too.

1 pound ground beef
1 onion, chopped
Gephart's chili powder
2 cans Ranch style beans, partly smashed with potato masher

Cook beef with onion, drain, add a little water and half bottle of chili powder.  Cook until meat has gotten the flavor color throughout.  Add beans and water(to your liking/thickness).  You can heat through and serve or let simmer as long as you'd like.

Crustless Bacon and Cheese Quiche


YUM This was good!!! This was a recipe Tee sent into the recipe challenge group.


Crustless Bacon and Cheese Quiche
5 green onions, chopped, divided
1 tomato, chopped, divided
12 slices OSCAR MAYER Bacon
1 cup sliced fresh mushrooms
12 eggs
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 cup KRAFT Shredded Cheddar Cheese
1 cup KRAFT Shredded Mozzarella Cheese
Make It!
HEAT oven to 325ºF.
RESERVE 2 Tbsp. each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon with slotted spoon to paper towels; reserve 1 Tbsp. drippings in skillet. Add mushrooms to skillet; cook and stir 2 min. or until tender. Remove from heat. Chop bacon. Add to skillet with onions and tomatoes; mix well.
BEAT eggs and sour cream with whisk until well blended. Pour into greased 13x9-inch baking dish; top with bacon mixture and cheeses.
BAKE 30 min. or until center is set. Sprinkle with reserved onions and tomatoes. Let stand 5 min. before cutting to serve

Quick Pasta Carbonara

We all loved this! Definitely a keeper recipe!

PREP 20 min.
MAKES 4 servings
COST PER SERVING = $0.94*
what you need
½ lb. medium-size pasta
4 slices OSCAR MAYER Bacon, chopped
4 oz. (½ of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
½ cup KRAFT Grated Parmesan Cheese
¾ cup milk
1 cup frozen or canned peas
½ tsp. garlic powder
make it
COOK pasta as directed on package. Meanwhile, cook bacon in large skillet until crisp; remove with slotted spoon to paper towels, reserving 2 Tbsp. drippings in skillet.
ADD remaining ingredients to drippings; cook on low heat until cream cheese is melted and mixture is well blended and heated through.
DRAIN pasta; place in large bowl. Add cream cheese sauce and bacon; mix lightly.

Quiche



I got this recipe off recipezaar.com and it was so good. I love that it can use up leftovers too! Instead of just making it to freeze I made two and put one in the freezer and baked the other for dinner. It took a long time to finish cooking in my oven but that could just be my oven's temperature issues. I used half a pound of "bulk" sausage, frozen spinach and half cheddar/half mozzarella. Everyone loved this except Corrine and I didn't even have her try it...she just had a sandwich for dinner instead:)

Quiche in a Bag (Oamc-Freezer Cooking) Recipe #290442

50 min 10 min prep

SERVES 6 -8

1 cup meat, any diced and browned (such as bacon, ham, chicken, sausage etc)
3/4 cup vegetable (thawed chopped spinach, broccoli, chopped green pepper)
1 cup cheese, shredded
1/4 cup onion, diced
1 cup milk
4 eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon Tabasco sauce (use 1 tsp for a spicier kick)
1/2 cup whole wheat flour
2 teaspoons baking powder
Combine meat, vegetable, cheese, and onion. Place this mixture in a labeled 1-gallon freezer bag.
With a mixer or blender, combine the milk, eggs, Tabasco sauce, flour and baking powder.
Pour into the bag with the meat/vegetable mixture.
Seal and freeze.
To serve, thaw completely. Shake bag well and pour into a spray-treated or greased deep dish pie plate or quiche pan.
Bake at 350º for 35-45 minutes, until lightly browned on top and well set in the center.
Cool about 5 minutes before serving.

Crispy Salsa Chicken


4 small boneless skinless chicken breast halves (1 lb.)
1 pouch SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/2 cup KRAFT Shredded Monterey Jack Cheese
Make It!
HEAT oven to 400ºF.

COAT chicken with coating mix as directed on package. Place on baking sheet.

BAKE 20 min. or until chicken is done (165°F).

TOP with salsa and cheese. Bake 5 min. or until cheese is melted.

Steak tips over rice

This was one of Mandi's choices for her week and was originally from southern plate. This was really good and you can't get much easier! I want to add salt next time and I used glass jars of gravy instead of cans to get around msg. I'll add a picture next time I make it.

1 Package Stew Meat
1 Can Beef Gravy
Rice, prepared according to package directions
Place stew meat in slow cooker, cover with beef gravy. Cook on low, 7-8 hours or on high 3-4 hours. Serve over hot rice.

Pasta and smokie bake



I got this recipe from Shar and it was easy and so good

1 lb smokies, cut into small bites(I bought lil' smokies...14 ounce package)
1 jar (15 oz) spaghetti sauce---think mine was bigger
1 bag of pasta, cooked and drained--I think I used a 12 ounce box
1/3 cup grated Parmesan cheese
2 cups shredded cheese--I used cheddar

preheat oven 350 degrees
in greased qt baking dish combine
smokies (cook if needed, most are precooked) , sauce, penne pasta and parmesean cheese.
top with shredded cheese.
bake for 15-20 minutes

Beef tips


This was sooooo good! I even got compliments from Corrine *gasp* This is recipe #17990 on recipezaar.


Beef tips
2 lbs cubed beef stew meat
1 onion, chopped
1 package brown gravy mix
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 cups water
3 tablespoons vegetable oil
1 teaspoon garlic
1 teaspoon salt
1 teaspoon ground pepper
1 cup water
In a large skillet, heat oil over high heat.
Saute the onion until translucent.
Add stew meat and cook on high heat until meat is browned on all sides (3-5 minutes). Pour 2 cups water, soy sauce, and worcestershire sauce into the skillet.
Stir in garlic powder, salt and pepper.
Bring to boil and reduce heat.
Cover and simmer for 1 1/2 to 2 hours.
Then combine the gravy mix with 1 cup of water, mix thoroughly and stir into the meat. Bring to boil, stirring frequently until it slightly thickens.
Serve over egg noodles.

Hungarian Goulash

UPDATE: (May 09)We loved this!!! Would definitely double the meat part next time but I wouldn't double the noodles...just add a bit.
I got this from the 'zaar. It's going in the freezer as soon as it cools. I would double this if I made it again(if we like it)...will have to have a large salad or other side to be sure everyone gets full. Oh and I used 1/4 cup butter instead of shortening.

Hungarian Goulash Recipe #59805
3 hours 30 min prep

SERVES 6 -8

1/4 cup shortening
2 lbs beef chuck or beef round steak, cut into 1 inch cubes
1 cup sliced onion
1 garlic clove, minced
1/4 cup catsup
2 tablespoons worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
2 teaspoons paprika
1/2 teaspoon dry mustard
1 dash red cayenne pepper
1 1/2 cups water
2 tablespoons flour
1/4 cup water
3 cups hot cooked noodles
Melt shortening in large skillet.
Add beef, onion and garlic; cook and stir until meat is brown and onion is tender.
Stir in catsup, Worcestershire, sugar, salt, paprika, mustard, cayenne and 1 1/2 cups water.
Cover; simmer 2 to 2 1/2 hours.
Blend flour and 1/4 cup water; stir gradually into meat mixture.
Heat to boiling, stirring constantly.
Boil and stir 1 minute.
Serve over noodles.
To freeze: Assemble as directed. Cover and freeze.
To serve: Thaw in the fridge. Re-heat, covered at 350 degrees for 35-40 minutes.

Swiss Chicken Casserole


LOVE this!!!  I used double the cheese...

Swiss Chicken Casserole

6 skinless, boneless chicken breasts
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1/4 cup milk
2 cups herb-seasoned stuffing mix
1/4 cup butter

Preheat oven to 350 degrees F. Arrange chicken in a greased
12x8x2-inch baking dish. Top with Swiss cheese slices.
Combine soup and milk and stir well. Spoon mixture over
chicken and sprinkle with stuffing mix. Drizzle butter over
crumbs. Cover and bake for 50 minutes. Makes 6 servings.

Bean and Beef Dish


I got this from the miserly moms site and everyone here loved it...we actually ran out so to make it again I need to figure out a way to double it. I used grands biscuits again and had to bake it about 30 minutes to get them to not be doughy. I'm putting the prices I actually paid...just lucked out with these deals:)

Bean & Beef Dish
Ingredients:
1# ground beef (99cents per pound)
1 can beans with MOLASSES (about 1.19--I couldn't find molasses so I got honey)
1 cup ketchup
1 cup brown sugar
2 small biscuit tubes ( I used most of one can of grands and got them on sale with a coupon for .25)
1/2 cup shredded cheddar cheese ( about 99 cents)

Brown ground beef. Drain and place in ungreased, round 1 1/2 qt casserole dish. Stir in beans, ketchup and brown sugar. Mix well. Take biscuits and cut in half so that one side is flat. Place in two rows around the casserole dish. ( LEAVE the middle open or the biscuits will not cook right). Sprinkle with cheese.Bake at 350 until the biscuits are done. ( about 20 minutes)

BBQ Cups


I doubled this one and it's a good thing because there were no leftovers even doing that! I used two pounds of meat just because all my meat is in the freezer in 1 pound packages. I also used Grands biscuits and cooked them for 14 minutes at 350 before upping the temp and adding the filling. It was more like a biscuit at the bottom than a "cup" doing it that way but it tasted the same:)

BBQ Cups
3/4 lb. hamburger meat
1/2 cup BBQ sauce
2 tlbs. brown sugar
1 tlbs. minced onions
1 can Pillsbury biscuits
3/4 cup shredded cheddar cheese

Brown beef, drain. Add bbq sauce, brown sugar and onion. Place individual biscuits into muffin pan - ungreased, press them out all around each muffin pocket. Put meat mixture into the biscuits and topwith cheese. Bake at 400 degrees for 10-15 minutes

Bubble Pizza


I didn't bother taking a picture of this. There are pics all over the net. But I do want to save the recipe because it was so easy and so good. The whole pan full was gone in no time!
3 pkgs. refrigerator biscuits (I used two cans of Grands)
1 can or jar of spaghetti sauce
Shredded mozzarella
Pizza toppings--I just used pepperoni this time
Directions:
Cut biscuits into quarters and place in a 9x13 baking dish. Add sauce, stir to coat, and spread evenly in bottom of pan. Top with cheese, then toppings, (3 toppings or less).
Bake at 375 degrees for about 35 minutes. Be sure to check middle to make sure all the dough is cooked through. I turned the temp down to 350 and continued cooking another 10 minutes to make sure the middle dough was done.
