Salsa Verde in the crockpot

We loved this!!  And the leftover meat I cut up and put in a beef pot pie along with some other steak a few nights later.  This is another eatathomecooks.com recipe.  I used a huge steak from our freezer of local beef and cooked it overnight with all the ingredients but the onions(which I added and let cook another 4 hours or so until they were soft).


Salsa Verde in the crockpot

boneless rounds steak or another cut of beef
1 small can of salsa verde
1/2 cup chicken broth, beef broth or water
1 tsp. chili powder
1 tsp. cumin
1 clove garlic, minced
1 onion, sliced
flour tortillas
cheddar cheese
lettuce, tomato, sour cream etc
Put the steak and onions in the crockpot.  Combine the salsa, broth and seasonings.  Pour over the steak.  Cook on high for 5-6 hours or low for 7-8 hours.
Shred the meat and serve in the tortillas with the fixings.

Crockpot Lasagna

This was a really easy tasty meal!  I put it in the fridge overnight(because I forgot to turn the crockpot on but we'll pretend it was planned).  It only took about 3 hours on low to warm up and be done since I'd let it sit overnight:o)  I did not take a picture because I got lazy and instead of layering I threw everything together and layered with noodles so it doesn't *look* as lovely as it really should have.

Slow-Cooker Lasagna

What You Need!
1 lb. ground beef
1 jar  (26 oz.) spaghetti sauce
1 cup water
1 container  (15 oz.) BREAKSTONE'S or KNUDSEN Ricotta Cheese
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Mozzarella Cheese, divided
1/4 cup  KRAFT Grated Parmesan Cheese, divided
1 egg
2 Tbsp.  chopped fresh parsley
6 lasagna noodles, uncooked
Make It!
BROWN meat in large skillet; drain. Stir in spaghetti sauce and water. Mix ricotta, 1-1/2 cups mozzarella, 2 Tbsp. Parmesan, egg and parsley.
SPOON 1 cup meat sauce into slow cooker; top with layers of half each of the noodles, broken to fit; and cheese mixture. Cover with 2 cups meat sauce. Top with remaining noodles, broken to fit; cheese mixture and meat sauce. Cover with lid.
COOK on LOW 4 to 6 hours or until liquid is absorbed. Sprinkle with remaining cheeses; let stand, covered, 10 min. or until melted.

Note
For best results, do not cook on the HIGH heat setting.
Make Ahead
If your slow cooker has a removable liner, layer ingredients in liner as directed. Refrigerate overnight. Place liner in slow cooker the next day and cook as directed.

Sausage and beans with potatoes

I was in a huge hurry putting this together and totally forgot the onions...think it would have helped keep the potatoes white but they did okay anyways and all cooked well.  I think a sauce would have pulled it together even better but I liked this...the kids didn't complain:)

Serving Size  : 4  

1 pound Smoked sausage
6 Potatoes
2 Onions
1 1/2  pounds  Green beans -- fresh

      Peel potatoes and cut into chunks. (Similar to the chunks you would
  place in stew).   Put the potatoes into the bottom of your crockpot.
  Peel and slice the onion and lay onions on top of  potatoes.   Wash and
  prepare the fresh green beans.  Place on top of the  onion.  Add
  approximately 1 cup of water to the crockpot.  Slice the  smoked sausage
  into slices or four large portions and place on top of  green beans.  Turn
  the crockpot on a medium setting and cook all day.   Approximately 8
  hours.  This turns into a delicious one pot meal for a  busy day.

Crock Pot Pork Chops

I used bone-in pork chops and increased the liquid but it worked out great and they fell off the bone anyways! These are really good and easy!


Crock Pot Pork Chops

8 boneless pork chops (1/2 inch thick)

2 tablespoons olive oil

1/4 teaspoon salt

1/8 teaspoon pepper

2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted

3 cloves garlic, chopped

1 medium onion, chopped

1/2 cup ketchup

2 tablespoons Worcestershire sauce


In a large skillet, cook pork chops in oil until lightly browned on each side. Sprinkle with salt and pepper and place in Crockpot. In a bowl, combine the soup, garlic, onion, ketchup and Worcestershire sauce and pour over chops. Cover and cook on high for 4-5 hours or until meat juices run clear.

SL Slow Cooked Orange Pork Roast Tacos


This sounded like a great way to make something besides the usual tacos with ground beef. I also never buy this cut of meat. It was good! I don't know that it was worth the price of buying orange marmalade but I would definitely cook another pork shoulder in the crockpot! Day two I shredded it and we had bbq sandwiches for lunch that were really good. To make this again I would start it the night before because at 8 hours it was nowhere near done. I removed the fat, turned it over and continued cooking it to get it done.
Also I used flour tortillas because we don't like corn.

SL Slow Cooked Orange Pork Roast Tacos

Ingredients

* 1 medium onion, chopped * 1 (10-pound) bone-in pork shoulder, picnic cut * 2 tablespoons soy sauce * 1 tablespoon chopped garlic * 2 teaspoons salt * 1 teaspoon fresh ground black pepper * 1 cup orange marmalade * 20 corn tortillas

Directions

Place the onions in the bottom of a 5-quart slow cooker. Place the pork shoulder, fat and skin side up. in the slow cooker. In a medium bowl stir together soy sauce, garlic, salt pepper and orange marmalade. Pour mixture over the pork. Cover and cook on low for 8 hours.

Remove shoulder to a serving platter and let rest for 5 minutes. Break up some of the meat with a fork and arrange on platter. Leave the rest of the meat on the bone to keep it warm and moist and let your guest pull it off the as they need it.

Wrap the tortillas in damp towels, 10 to a towel and microwave on high for 30 seconds. Set out pork and tortillas with Cabbage Slaw and have guests assemble their own tacos.

Steak tips over rice

This was one of Mandi's choices for her week and was originally from southern plate. This was really good and you can't get much easier! I want to add salt next time and I used glass jars of gravy instead of cans to get around msg. I'll add a picture next time I make it.

1 Package Stew Meat
1 Can Beef Gravy
Rice, prepared according to package directions
Place stew meat in slow cooker, cover with beef gravy. Cook on low, 7-8 hours or on high 3-4 hours. Serve over hot rice.

Tastin' is Believin' Chicken

Melissa's grandma used to make this and it's fantastic! Cooking it in the crockpot made it unbelievably easy too:) This will become one of our staple meals for sure!

4 - 8 boneless skinless chicken breats-depending on size
1 8-oz bottle of Russian salad dressing
1 can whole berry cranberry
1 Package Lipton Onion Soup Mix

Put chicken in the bottom of the crockpot, pour everything on top and cook on high for 4 hours until chicken is done.

Chicken Stew


I was looking for a way to use up celery and carrots I bought last week so I looked up recipes and made this. It was quite good for a fall meal and I only wish I'd had the energy to make some fresh bread to go with it! 

My changes were...I used chicken thighs(dark meat has more iron and I am still fighting the anemia), I didn't do the dumplings and instead I threw in a box of vermicelli right at the end, I used a lot more celery and carrots because I didn't want them in the fridge anymore, I subbed my cream soup mix for the cream of potato since I couldn't find any without msg and I didn't cut up the chicken. Sounds like a lot of changes, huh? :)


Chicken Stew
1 onion, chopped
4-5 carrots, cut in one inch chunks
3-4 celery stalks, sliced
2 medium potatoes, chopped
4-6 skinless, boneless chicken breasts, cut in 1" pieces
2 cans cream of chicken soup
1 can cream of potato soup
1 cup frozen peas
1/2 to 1 cup chicken broth

pepper
1 cup Bisquick
1/3 cup water

Combine onion, carrots, celery, potatoes, chicken, soups, peas, broth and pepper in crock pot. Mix well. Cook on high till heated through. Cook on low 6-8 hours. Turn Crockpot to high. Mix Bisquick and water and drop by tablesppons onto hot stew. Cook on high 20-25 minutes.

Slow Cooker Chicken Cacciatore


I made this first in 2006 but when I was without internet last week I was forced to find recipes on paper so I ran across this print out and made it again:) I added a block of cream cheese at the end which gave it the odd orange color.

6 skinless, boneless chicken breast halves
1 (28 ounce) jar spaghetti sauce
2 green bell pepper, seeded and cubed
8 ounces fresh mushrooms, sliced
1 onion, finely diced
2 tablespoons minced garlic

1. Put the chicken in the slow cooker. Top with everything else.
2. Cover and cook on Low for 7-9 hours.

Crockpot beef and beans

This was from my week with a crockpot theme. It was good for a change and would make a good potluck dish!


INGREDIENTS:
1 to 1 1/2 pounds lean ground beef
1 tablespoon olive oil
1 cup chopped onion
1/2 cup chopped green bell pepper
2 large cans (28 ounces each) baked beans
2 cans (8 ounces each) pineapple tidbits or chunks, drained
1/2 cup barbecue sauce
Dash cayenne pepper
PREPARATION:
In a large skillet, heat olive oil over medium heat. Add ground beef, onion, and bell pepper; fry until ground beef is no longer pink.
Combine the ground beef mixture with the remaining ingredients in the slow cooker. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.Serves 6 to 8.

Chicken Yum Yum


This was adapted from a pork chop recipe from Mandi. I changed it to chicken thighs and cooked it in the crockpot.

3 pounds skinless chicken thighs
2 cups chicken broth
1 cup honey
3/4 cup soy sauce
1/4 cup ketchup
2 teaspoons ginger
1 teaspoon garlic salt

Place chicken thighs in the bottom of crockpot, mix all other ingredients and pour over. Cook on low 8 hours or high 4 hours. Serve over rice with extra sauce.

Crockpot meatloaf


I made this with 90/10 beef and it really needs a "fattier" beef! It's a favorite around here=)

Tracy's Italian Meatloaf

2 pounds ground beef
2 cups soft bread crumbs
1/2 cup spaghetti sauce
1 large egg
2 Tbsp. dried onion
1/4 tsp pepper
1 1/4 tsp salt
1 tsp garlic salt
1/2 tsp dried italian herbs
1/4 tsp garlic powder
2 Tbsp spaghetti sauce

Line slow cooker with foil. Grease. Combine all ingredients except for the 2 Tbsp spaghetti sauce. Shape into loaf. Place on top of foil in slow cooker. Spread 2 Tbsp spaghetti sauce over top. Cover. Cook on HIGH 2 1/2-3 hours or LOW for 5-6 hours.
