Cheesy Zucchini Casserole

This was from Shar's week and it's delicious!

Cheesy Zucchini Casserole Dish

4 slices bread, cubed
1/4 cup melted butter
2 Cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 C shredded Cheddar cheese

Directions
Preheat oven to 350 degrees F.
Place bread cubes in a medium bowl and pour melted butter over the bread. Add the zucchini, onion, garlic salt and egg; mix well. Transfer the mixture into a 9X13 inch baking dish and top with the cheese.
Bake, covered, in preheated oven for 30 minutes. Then uncover the dish and bake for another 30 minutes

i wanted to leave the peels on too!!! but Scotts mom said maybe i shouldn't, so it was good with them as well? I LOVED this, it was very good.. cheese makes anything better! hee.

Chris and I debated about the peels but then I thought that since I leave them in zucchini bread they'd be fine and they were=))
I forgot to say we used onion rolls instead of regular bread and that was a goooood idea hee!
